Roasted Tomato, Pesto & Mozzarella Sandwich

Hey ! Are you ready for a food post ? Is your mouth already drooling from the title? No, just mine? Well I think you will be drooling by the end of this post. In recent weeks, I’ve been challenging myself to try new techniques, foods and flavor combinations in the kitchen. I’m a victim of self-inflicted food boredom. With meal prepping to fall back on whenever I find myself eating TOO well I get stuck in a rut. Typically with a family size pack of chicken breast, rice, pastas and vegetables in order to ensure that I’m fueling my body with the good things it needs. And it gets really boring. Really fast.

That being said, I changed it up and stepped out of my comfort zone with this sandwich. Traditional flavor combination, but with a kick.

If you’ve never roasted your own tomatoes, I enthusiastically encourage you to do it. Turn up the temperature on your oven, load up the garlic.. live a little.

Here’s what I used:

2 Tomatoes

2 tbs extra virgin olive oil

3 tbs garlic

1/4 cup basil pesto

8oz mozzarella

4 slices of Italian Bread


Preheat your oven to 400. While the oven warms up, slice your tomatoes in 1/4in-1/2in slices. You can slice the mozzarella the same way.Β IMG_5273IMG_5281

When the oven reaches 400, place the tomatoes on a baking sheet. Drizzle olive oil on the tomatoes, add garlic and any other seasonings you want. Bake for 30-40 mins until tomatoes are crisp and caramelized.

Spread pesto on each slice of bread. Add 2 slices of mozzarella and place in oven on another baking sheet (I did this at the 30min mark, while the tomatoes were still roasting).IMG_5303

After 5-10 mins you should see the cheese has melted over the edges of the bread. Pull out your tomatoes and Italian bread.

Place tomatoes on 2 slices of bread. Place other to slices on top. Slice and Eat.
